General Manager

General Manager – Ichimaru Udon Cambridge £40,000 per year + £2,000 Signing Bonus 45-hour contract | 5 days per week We are looking for an experienced and hands-on General Manager to lead our Ichimaru Udon restaurant in Cambridge. Ichimaru is a fast-paced Japanese casual dining concept specialising in freshly prepared udon, rice dishes and Japanese favourites. We are looking for someone who can take full ownership of the restaurant, develop a strong team and consistently deliver excellent standards across operations, people, food safety and commercial performance. As General Manager, you will be responsible for the overall performance of the restaurant, including sales, labour, customer experience, team development, compliance and day-to-day operational standards. What you'll be responsible for: Leading, motivating and developing the restaurant team Taking full ownership of the day-to-day operation of the site Driving sales and identifying opportunities to grow the business Managing labour effectively and delivering agreed financial targets Recruiting, training and developing team members Building a strong management structure and succession plan Maintaining excellent food quality, service and cleanliness standards Ensuring full compliance with food safety, health & safety and company procedures Managing stock, ordering, waste and cost controls Reviewing customer feedback and driving improvements Creating rotas in line with forecast sales and business requirements Working closely with the Area Manager and Support Office teams Creating a positive culture where people are accountable, supported and proud of their restaurant What we're looking for: Previous experience as a General Manager, Restaurant Manager or strong Deputy/Assistant General Manager ready for the next step Experience within a high-volume restaurant, casual dining or quick-service environment Strong leadership and people-management skills Good commercial awareness, particularly around labour, sales and cost control Excellent organisation and communication skills A hands-on approach and willingness to lead from the floor Strong understanding of food safety and operational compliance Someone who is proactive, accountable and comfortable working in a fast-paced environment Package & benefits: £40,000 annual salary £2,000 signing bonus , subject to remaining with the business for a minimum of 12 months 45-hour contract 5-day working pattern Opportunities for career progression as the group continues to grow Training and ongoing support from the Operations and Area Management teams This is a great opportunity for someone who wants genuine ownership of their restaurant and the chance to make a visible impact on the team and the business.
