Duties and Responsibilities
- Pastry Section Leadership: Manage and oversee the pastry kitchen section, ensuring readiness, organisation, and excellence in production.
- Dessert & Bakery Execution: Prepare and present a variety of desserts, breads, viennoiserie, and plated sweets to the highest standards of taste, texture, and presentation.
- Team Development: Support and guide Demi Chefs and Commis Chefs, fostering a collaborative and creative environment.
- Inventory & Ordering: Monitor pastry‑specific stock levels, place orders, and ensure proper storage and rotation of ingredients.
- Compliance & Hygiene: Uphold rigorous food safety and hygiene standards in line with HACCP and company policies, especially in temperature‑sensitive pastry production.
- Operational Efficiency: Maintain pastry equipment and workstations, ensuring smooth service and adherence to kitchen protocols.
About You
- Proven experience in hotel pastry operations, with the ability to manage and lead a section independently.
- Strong knowledge of pastry techniques including laminated doughs, chocolate work, plated desserts, and bakery production.
- Excellent communication and leadership skills to support and inspire junior pastry team members.
- Ability to work under pressure in a fast‑paced, multi‑outlet environment.
Experience Preferred
- Previous experience in a Pastry Chef de Partie role within a luxury hotel or fine dining restaurant.
- Proven work experience or exposure to London‑based hotels, with knowledge of UK hospitality standards and local compliance.
- Level 2 or higher certification is preferred, with strict adherence to health and safety regulations.
