Hyatt Regency London – The Churchill is a five star hotel located in upmarket Marylebone, overlooking the gardens of Portman Square. The hotel features 440 guestrooms, including 50 suites, and 11 distinctive meeting and event spaces. With a substantial restaurant, bar, and banqueting operation, the hotel plays a significant role within London’s competitive hospitality landscape.
The Opportunity
This is an opportunity to shape culinary direction beyond your own kitchen. It is a defining leadership role at an exciting stage in the hotel’s food and beverage evolution, as the department enters a new phase with clear ambition to strengthen market presence, refine its concepts, and elevate the overall guest experience. As Executive Chef, you will play a central role in shaping what this looks like in the years ahead.
You will not simply lead the kitchen; you will help define the direction of the entire culinary proposition. From menu philosophy and sourcing standards to outlet identity and positioning, your influence will shape how the hotel competes and how it is perceived within London’s dynamic dining scene. This is a visible senior role with genuine influence over reputation, guest perception, and long-term growth. The opportunity is not simply to manage an operation, but to define its future.
Reporting to the Hotel Manager and working closely with the Food and Beverage leadership team, you will lead the strategic and operational direction of all culinary and stewarding functions. From high volume banqueting to refined restaurant and bar service, you will oversee a complex operation where creativity, discipline, and profitability work seamlessly together.
Leading a current brigade of approximately 35 chefs and stewarding colleagues, you will set the pace for excellence. Your leadership will shape standards, develop future talent, and create a culture defined by pride, accountability, and ambition.
Beyond the hotel, you will collaborate with peers across the UK, sharing best practice, supporting new openings, and helping to drive innovation, consistency, and commercial performance across all UK managed hotels. If you are ready to lead at scale, inspire teams, and leave a lasting mark on a growing national portfolio, this role offers the platform to do it.
About You
You are an accomplished Executive Chef or senior culinary leader from a luxury or upper upscale hotel environment, confident in leading sizeable teams within fast-paced, high volume operations. You combine strong culinary instinct with sharp commercial awareness and understand how to translate vision into results. You know how to balance creativity with consistency and ambition with control.
You are energised by London’s dining landscape and motivated by staying relevant, competitive, and forward-thinking. Visible, decisive, and credible, you lead from the front while thinking strategically about the bigger picture. You are ready to shape the next chapter of the hotel with a clear appetite for growth and evolution.
