Tucked away in upmarket Marylebone overlooking the gardens of Portman Square, Hyatt Regency London – The Churchill is a five star London hotel with 440 guestrooms, including 50 suites, and 11 distinctive meeting and event spaces. With a substantial restaurant, bar and banqueting operation, the hotel plays a significant role within London’s competitive hospitality landscape.
This is an opportunity to shape the pastry direction of one of London’s leading luxury hotels. It comes at an exciting stage in the hotel’s food and beverage evolution, as the department enters a new phase with clear ambition to strengthen market presence, refine its concepts and elevate the overall guest experience.
As Head Pastry Chef, you will play a central role in shaping the hotel’s pastry identity across restaurants, bars, afternoon tea, banqueting, events and in-room dining. Your work will influence some of the most memorable moments of the guest journey, from elegant plated desserts and refined patisserie to large-scale events, bespoke celebrations and seasonal culinary experiences. You will not simply oversee pastry production. You will help define the creative direction, standards and reputation of the pastry offering. From menu development and presentation style to sourcing, consistency and commercial performance, your influence will shape how the hotel’s pastry proposition is experienced and remembered by guests.
Reporting to the Executive Chef and working closely with the wider culinary and Food and Beverage teams, you will guide the strategic and operational direction of the pastry kitchen. You will bring creativity, precision and structure to a complex operation where quality, pace and profitability must work seamlessly together.
You are an accomplished Head Pastry Chef or senior pastry professional from a luxury or upper-upscale hotel, restaurant or events environment, confident in delivering exceptional quality within a fast-paced, high-volume operation. You combine strong classical technique with a modern, creative outlook, creating pastry experiences that feel refined, relevant and commercially effective. Confident across plated desserts, afternoon tea, banqueting, patisserie, chocolate, viennoiserie and celebration cakes, you move seamlessly between creativity, consistency and execution. Visible, hands-on and credible, you bring fresh ideas, strong standards and the discipline to deliver them consistently. You are ready to shape the next chapter of the hotel’s pastry offering with ambition, energy and care.
