Duties and responsibilities

  • Assist in storing and organising wine inventory, ensuring proper handling and rotation.
  • Support senior sommeliers during service, helping with wine presentation and pouring.
  • Take part in wine tastings and training sessions to develop basic wine knowledge and service skills.
  • Help prepare wine for events, menus, or pairings under the guidance of the sommelier team.
  • Assist with setting up and clearing wine service areas, ensuring cleanliness and organisation.
  • Deliver exceptional, personalised service to all guests, ensuring a memorable dining experience.
  • Demonstrate strong knowledge of menus, ingredients, and beverages to confidently guide guests and make recommendations.
  • Assist with restaurant service and ensuring a seamless dining experience throughout service.
  • Prepare and maintain restaurant set-ups, side stations and service areas, while ensuring tables are impeccably presented at all times.
  • Clear and reset tables efficiently, maintain cleanliness of glassware and equipment, and contribute to the smooth running of daily operations.
  • Proactively identify opportunities to upsell and maximise revenue while enhancing the guest experience.
  • Monitor guest satisfaction throughout service, responding promptly to requests and resolving any concerns effectively.
  • Maintain high standards of cleanliness, presentation, and organisation within the restaurant and service areas.
  • Work collaboratively with the wider team to ensure smooth daily operations and excellent service delivery.

Qualifications / About you

We are looking for a passionate and service-driven individual with a genuine love for hospitality.

WSET Level 2 (or equivalent) and prior experience in a fine dining restaurant or luxury hotel is highly desirable.

Previous experience in a similar role within a restaurant or hotel environment is advantageous.

You will have excellent communication skills, a proactive attitude, and the ability to remain calm under pressure while delivering outstanding guest experiences.

A strong team spirit, attention to detail, and commitment to high standards are essential.
