Great Scotland Yard Hotel, part of The Unbound Collection by Hyatt, is a luxury hotel steeped in history, located just moments from Covent Garden and around the corner from Trafalgar Square in the heart of Westminster. The hotel features 151 guestrooms and suites and blends historic character with contemporary design. Dining and bar experiences include Ekstedt at The Yard, a Scandinavian inspired restaurant celebrating open fire cooking, creative cocktails at the 40 Elephants Bar, an extensive whisky selection at Sibin, and Afternoon Tea in The Parlour. Colleagues work in a distinctive and characterful environment delivering thoughtful and memorable service to guests exploring the culture, history and landmarks of central London.
About Great Scotland Yard’s Food & Beverage Offering: Great Scotland Yard Hotel is home to some of London’s most distinctive Food & Beverage experiences. The successful candidate will oversee the hotel’s exceptional outlets, including two uniquely curated bars — The 40 Elephants, specialising in signature cocktails, and Sibín, showcasing whiskies from around the world. The hotel is also home to Ekstedt at The Yard, where Michelin‑starred chef Niklas Ekstedt brings Scandinavian cooking techniques to life using the finest seasonal British ingredients.
The Role: As Food & Beverage Manager, you will lead the strategic and operational direction of the hotel’s restaurants, bars, and events offering, continuously evolving the food and beverage concepts and ensuring every experience reflects the individuality, creativity, and luxury positioning of Great Scotland Yard Hotel. This is a highly visible role for a passionate hospitality leader who thrives in experience‑led luxury environments and understands how to create energy, reputation, and commercial success through exceptional Food & Beverage delivery.
- Lead all Food & Beverage operations, ensuring exceptional service and memorable guest experiences across all outlets.
- Drive commercial performance through revenue growth, cost control, forecasting, and menu optimisation.
- Inspire, coach, and develop a high‑performing team aligned with Hyatt’s culture and values.
- Maintain a strong operational presence during key service periods to ensure seamless execution and service excellence.
- Collaborate with Marketing to create innovative activations, events, and guest experiences that strengthen brand visibility.
- Continuously review market trends, guest feedback, and competitor activity to keep concepts dynamic and commercially competitive.
- Ensure full compliance with brand standards, financial procedures, licensing regulations, and health & safety requirements.
- Foster a culture of collaboration, accountability, and personalised hospitality across all Food & Beverage teams.
About You: We are looking for a highly commercial, creative, and hands‑on Food & Beverage leader who can reposition and elevate the hotel’s F&B offering into a destination for both hotel guests and the wider London market. This individual must have a strong understanding of the competitive Central London hospitality scene and demonstrate the ability to create innovative activations, partnerships, and experiences that drive significant outside guest traffic into the hotel. The ideal candidate will be a dynamic operator with a strong marketing and PR mindset — someone capable of building meaningful collaborations with suppliers, brands, and local partners to create relevant happenings, events, and social experiences that generate visibility, energy, and revenue across all outlets. They should have a proven ability to elevate brand presence through strong social media engagement, marketing initiatives, and strategic partnerships, while ensuring each outlet has a clearly distinguished positioning and identity.
Beyond commercial performance, we are seeking someone deeply focused on guest experience and service excellence, with the ability to elevate standards in alignment with Forbes expectations. The successful candidate must understand luxury hospitality, have exceptional attention to detail, and create memorable experiences that resonate with both hotel guests and the white‑collar Central London audience we aim to attract. While strong financial acumen and the ability to manage a P&L remain essential, the emphasis is equally on creativity, innovation, and leadership presence. The calibre of candidate required must be exceptionally strong — someone capable of inspiring teams, driving accountability, and leading with a nimble, humble, and hands‑on management style. They must be visible within the operation, highly collaborative, and able to foster a culture of excellence, energy, and continuous improvement across the F&B division.
