Duties and responsibilities related to the Sous Chef - Banqueting role:

  • Utilise your collaborative knowledge of the culinary department wherever possible, displaying initiative when problem solving.
  • Minimise waste to help ensure that the budget and sustainability measures are adhered to.
  • Knowledge of seasonal produce & new products on the market and awareness of culinary trends.
  • Ensure all dishes are correctly presented and garnished before being sent for service.
  • Mentor and coach colleagues to ensure maximum engagement and a smooth operation.
  • Ensure hygiene and sanitation guidelines are strictly adhered to, and that equipment and utensils are handled, maintained and used correctly.
  • To ensure that the department’s operational budget is strictly adhered to, that all costs are controlled, and expenditures are properly approved.
  • To maximise colleague productivity through the use of multi-skilling, multi-tasking and flexible scheduling in order to meet the financial goals of the Department as well as the expectations of all people we serve.
  • To prepare and ensure rotas are posted and timesheets submitted on time, making sure that they reflect business needs and other key performance indicators.

About you:

  • Proven experience in luxury culinary operations, ideally within a hotel environment, demonstrating strong leadership and management skills to motivate and inspire a team.
  • Possess extensive knowledge of food and beverage trends, industry best practices, and regulatory requirements.
