Duties and responsibilities related to the Senior Sous Chef position:
- Kitchen Leadership: Lead and coordinate kitchen staff, ensuring smooth operations across all sections and fostering a high-performing team culture.
- Menu Execution & Quality Control: Ensure dishes are prepared to the highest standards, maintaining consistency in taste, presentation, and timing, while supporting innovation and seasonal menu development.
- Inventory & Cost Management: Monitor stock levels, manage supplier relationships, and help control food costs and waste reduction strategies.
- Training & Development: Mentor junior chefs and apprentices, fostering skill development, morale, and a culture of continuous improvement.
- Health & Safety Compliance: Enforce hygiene standards, food safety protocols, and kitchen cleanliness in line with HACCP and local regulations.
- Problem Solving & Decision-Making: Step in during service disruptions, resolve conflicts, and make quick decisions under pressure to maintain service excellence.
- Collaboration with Head Chef: Assist in menu planning, specials creation, and operational strategy, contributing to the overall culinary vision.
About you:
- Proven experience as a Senior Sous Chef or Sous Chef in a luxury hotel or high-end culinary environment.
- Extensive knowledge of food safety regulations and HACCP compliance.
- Exposure to menu development and seasonal planning.
- Proven ability to manage teams, delegate tasks, and maintain kitchen discipline.
- Committed to delivering the highest standards of quality, consistency, and presentation, while balancing creativity with operational and financial goals.
Experience Preferred:
- Formal culinary training or diploma.
- Ability to thrive in high-pressure environments and adapt to changing menus or guest preferences.
- Proven work experience or exposure to London-based hotels, with knowledge of UK hospitality standards, local compliance (e.g., Food Hygiene Rating Scheme), and service expectations for international guests.
- Proficiency in Microsoft Office Suite.
