Duties and responsibilities related to the Breakfast Chef de Partie role:
- Section Leadership: Manage and oversee a specific kitchen section during breakfast service, ensuring readiness, organisation, and excellence.
- Menu Execution: Prepare and present breakfast dishes to the highest standards, maintaining consistency in flavour, texture, and visual appeal across all morning offerings.
- Team Development: Support and guide Breakfast Demi Chefs and Commis Chefs, fostering a culture of learning and collaboration.
- Inventory & Ordering: Monitor stock levels, place orders, and ensure proper storage and rotation to minimise waste and maintain freshness.
- Compliance & Hygiene: Uphold rigorous food safety and hygiene standards in line with HACCP and company policies.
- Operational Efficiency: Maintain equipment and workstations, ensuring smooth breakfast service and adherence to kitchen protocols.
- Innovation & Creativity: Contribute ideas to breakfast menu development, morning specials, and guest experiences tailored to early risers.
About You:
- Proven experience in hotel culinary operations, with the ability to manage and lead a section independently.
- Strong knowledge of food preparation techniques, kitchen operations, and HACCP compliance.
- Excellent communication and leadership skills to support and inspire junior team members.
- Ability to work independently and efficiently during early morning shifts in a fast-paced, multi-outlet environment.
Experience Preferred:
- Previous experience in a Chef de Partie role within a luxury hotel or fine dining restaurant.
- Proven work experience or exposure to London-based hotels, with knowledge of UK hospitality standards, local compliance (e.g., Food Hygiene Rating Scheme), and service expectations for international guests.
- Level 2 or higher certification is preferred, with strict adherence to health and safety regulations.
