Duties and responsibilities related to the Demi Chef de Partie role:

  • Preparation: Execute all aspects of Mise en Place (MEP), ensuring readiness and consistency for service across multiple outlets.
  • Food Quality & Presentation: Assist in the preparation and presentation of dishes to the highest standards, maintaining consistency in taste, texture, and visual appeal.
  • Hygiene & Safety Compliance: Uphold rigorous hygiene and food safety standards in accordance with HACCP and company policies.
  • Workstation & Equipment Maintenance: Ensure all kitchen areas, tools, and machinery are clean, organised, and well-maintained to support efficient operations.
  • Policy Implementation: Support the implementation of food policies, including allergen management and dietary requirements, ensuring compliance and guest safety.
  • Inventory & Ordering: Monitor stock levels, assist with ordering, and ensure proper storage and rotation of ingredients to minimise waste and maintain freshness.
  • Team Collaboration: Work collaboratively with the kitchen team, contributing to a positive and productive environment.
  • Learning & Development: Engage in continuous professional development, attending training sessions and seeking opportunities to expand your culinary skills and knowledge.

About you:

  • Proven experience in hotel culinary operations, with the ability to manage and support a section of the kitchen effectively.
  • Possess solid knowledge of food preparation techniques and trends, and a strong commitment to maintaining food safety and hygiene standards.
  • Excellent communication and teamwork skills to work effectively with chefs, kitchen porters, and front-of-house staff.
  • Capable of working under pressure in a fast-paced environment, especially during peak service hours.

Experience Preferred:

  • Previous experience in a similar role within a luxury hotel environment or fine dining restaurant.
  • Proven work experience or exposure to London-based hotels, with knowledge of UK hospitality standards, local compliance (e.g., Food Hygiene Rating Scheme), and service expectations for international guests.
  • Level 2 or higher certification is preferred, with strict adherence to health and safety regulations.
