This role offers an opportunity to shape the pastry direction of one of London’s leading luxury hotels at a pivotal stage in its food and beverage evolution. As Head Pastry Chef you will influence the pastry identity across restaurants, bars, afternoon tea, banqueting, events and in‑room dining, contributing to memorable guest experiences and the hotel’s overall guest journey.
Responsibilities
- Shape the pastry direction of the hotel, creating a distinctive brand identity across all venues.
- Define the creative direction, standards and reputation of the pastry offering.
- Develop menus, presentation style, sourcing strategies and commercial performance.
- Guide the strategic and operational direction of the pastry kitchen under the Executive Chef.
- Bring creativity, precision and structure to a complex operation where quality, pace and profitability must align.
- Set a standard for excellence, develop talent, maintain consistency, and foster a culture of pride, accountability and ambition.
Qualifications
- Accomplished Head Pastry Chef or senior pastry professional with experience in a luxury or upper‑upscale hotel, high‑end restaurant or large‑scale events environment.
- Proven ability to deliver exceptional quality within fast‑paced, high‑volume operations.
- Strong classical technique combined with a modern, creative outlook.
- Extensive experience across plated desserts, afternoon tea, banqueting, patisserie, chocolate, viennoiserie and celebration cakes.
- Hands‑on, credible presence that brings fresh ideas, strict standards and disciplined execution.
