Hurlands Pickleball and Padel Club is Surrey's newest social sports destination, featuring 9 pickleball courts, 5 indoor padel courts, a lounge bar, fitness and wellbeing studios, meeting rooms, party rooms, and a club shop. As we grow, we're bringing food and beverage in-house to match the quality of the wider member experience, moving away from our current third-party provider to build a new, premium Hurlands hospitality offer.

The role involves reporting to our General Manager and taking full ownership of building the Hurlands food and beverage operation from the ground up. This includes creating the operating model, establishing supplier relationships, finalising menus, implementing systems, and developing procedures for long-term success. This position combines strategic input with hands-on delivery.

Key areas of responsibility include:

  • Proposition development — reviewing and refining the F&B strategy, developing a commercially viable menu range with target margins
  • Supplier and procurement — sourcing food, beverage, coffee, and retail suppliers, and negotiating commercial terms
  • Operational setup — stock control, ordering systems, daily operating procedures, and food safety compliance
  • Team and training — designing the staffing structure, developing training materials, and building a multi-skilled team
  • Financial performance — setting sales, margin, and labour targets, and reporting against them
  • Launch and ongoing management — leading the launch, producing a full operating manual, and owning day-to-day performance once live

About you: You’ll have significant experience in food and beverage management, hospitality openings or transitions, or leisure venue management, and be equally comfortable making strategic recommendations and delivering practical implementation on site.

Essential:

  • F&B management or start-up experience
  • Hospitality opening/transition projects
  • Supplier sourcing and procurement
  • Menu development and food costing
  • Stock control and operational systems
  • Team training and development
  • Commercial and financial management
  • Strong project management skills

Desirable:

  • Experience in health clubs, racquets clubs, or private members' clubs
  • Sports and leisure venues
  • Café and bar operations
  • Multi-site hospitality businesses
  • Coffee-led operations
