Head Sushi chef required for authentic Japanese sushi - they are looking for someone with authentic experience (ideally who worked in Japan in the past but not essential). The style of the sushi will be Izakaya style. We are looking for a Head sushi chef to look after a sushi counter that is using amazing fish and is for both eat in sushi and take home sushi as well. This is an open sushi counter, so you will speak and see the customers in front of you.
As a Head Sushi chef you will head up the authentic Japanese sushi counter, you will ensure your counter looks amazing. This counter is part of a retail unit, so you will work alongside other departments as well. You will create izakaya style sushi, set up your sushi counter, serve customers for take home sushi items and also plate up sushi for customers who are eating in the bistro area of the concept. This role will include all the standard head sushi chef duties.
We are looking for a head sushi chef to manage your sushi counter, you will have knowledge of izakaya style sushi and be passionate about great looking sushi counters. This kitchen will be authentic sushi, they are looking for the previous experience within an authentic Japanese kitchen, ideally having worked in Japan in the past, but not essential.
