head chef required for a kitchen the cooks for a small number of guests in a exclusive venue . They work with seasonal produce and works with the event organiser for the dishes each evening. This is small numbers and also for exclusive weddings. The guests can order anything they want, the role is like a chalet chef BUT is UK based & all year round!. You are also working in a small team and not on your own. This kitchen DOES NOT HAVE MENUS, they cook what the suppliers have and what the guests want. £56200 basic and £3000-3500 service. £59700 package. This can be a dream for many chefs, working on seasonal produce.
The role
we are looking for a creative head chef from a fresh food background who will be able to cope in a kitchen with no menus. You will work with the suppliers and guests to create the dishes. You will support the head chef and the chef de parties in the running of this kitchen. With no menu's, you will need to be great at costing menu's and knowing what ingredients you can use within a price mark. You will also need good communication skills, as you will meet the guests. This is a small kitchen and you work on a range of sections and cook what the guests are wanting to be on the menu. This role will include all the normal head chef duties.
Experience
We are looking for a headchef with good knife skills, use fresh food, from a rosette background. You will be organised, able to cope with changing menus, creative with fresh produce & good communication skills. You must be able to design menu's and have a wide range of skills. Ideally if you are also classically trained, this will help, as you might need to do a wide range of different sauces or dishes with no notice.
