head chef - new opening

Head Chefrequired for a new high end Deli, Food Counter & Restaurant opening later this year. The concept will have 3 sections to it, part one is the Gourmet retail store part, section 2 will be the food counters to take produce home to cook or recook, the 3rd area will be the bistro side which will serve breakfast, brunch and later on in the day will serve small Spanish plates. They will also have a sushi counter. The kitchen team will be made up of a prep kitchen area for food to take home, the food counters and also the kitchen area for eating in. The establishment will be open all day. head chef, £47-53k, running the kitchen side of the operation reporting into the site general manager.

The role
We are looking for a Head chef to manage the various parts of the food side of this operation. you will ensure the prep kitchen runs smoothly and all the dishes they sell on the counters to take home and the fridge to take home is prepared inline with the allergens and haccp requirements. you will also ensure the food counters run smoothly and the food to eat in area runs smoothly too. You will manage the team of sous chefs that look after each section, as well as the head fishmonger and head butcher. This role will include all the standard head chef duties.

Experience
We are looking for a head chef with a food understanding of italian & Spanish produce, this is really important as they will be serving small spannish plates and spanish meats. You will also have good knowledge of food control, food rotation, food presentation, HACCP, COSSH etc.
