We are looking for a Sous Chef Staff Dining to join our Catering and Retail Services Office at the House of Lords. This is a position where you play a key role in the day-to-day running of the staff dining kitchen, assisting with food preparation, service, team supervision, and compliance with food safety and hygiene standards.

You will also support the Head Chef in HR-related responsibilities, helping to manage staffing, performance, and training.

Youll be accountable to:

  • Assist the Head Staff Dining Chef in the preparation and service of daily menus for staff dining, ensuring quality, consistency, and nutritional balance.
  • Supervise kitchen operations and staff during service periods, maintaining high standards of food hygiene and presentation.
  • Support with the costing of dishes and portion control to ensure budgetary targets are met.
  • Monitor and maintain food safety standards, including correct use of temperature control systems, food probing, chilling, and fridge monitoring.
  • Assist in the management of stock levels, ordering, and inventory using computerised systems.
  • Contribute to the training and development of junior kitchen staff, promoting a positive and professional working environment.

  • Strong understanding of food safety, HACCP, and allergen management.
  • Experience using computerised stock control and temperature monitoring systems.
  • Ability to work under pressure and maintain high standards during busy service periods.
  • Good communication and team leadership skills.
  • Basic understanding of HR processes and willingness to support people management.
  • Recognised culinary qualification (e.g. NVQ Level 2 or 3 in Professional Cookery or equivalent).

It would be even better if you had:

  • Experience working in a public sector or heritage institution.
  • Knowledge of sustainable and inclusive catering practices.
  • Familiarity with HR systems and procedures.
