Role: The Assistant Head Baker plays a key leadership role within the Bakery team, supporting the Head Baker in delivering exceptional products and maintaining the highest operational standards expected within a luxury five-star hotel. This position requires a highly skilled artisan baker with excellent technical knowledge, strong leadership qualities, and a genuine passion for quality and continuous improvement. The successful candidate will lead by example, inspire the team, and ensure consistency across every aspect of bakery production. The Assistant Head Baker must be capable of taking full responsibility for the bakery operation in the absence of the Head Baker. Key Responsibilities: Support the Head Baker in managing daily bakery operations and take full responsibility in their absence. Lead, motivate, train, and develop the bakery team, promoting teamwork, accountability, and excellence. Produce high-quality artisan breads, sourdoughs, viennoiserie, and laminated products to luxury hotel standards. Oversee the full production process, ensuring consistency in flavour, texture, appearance, and presentation. Troubleshoot production issues and implement effective corrective actions when required. Maintain rigorous quality standards through daily checks, accurate recipes, and continuous improvement. Assist with production planning, prioritising workloads, managing stock, reducing waste, and ensuring equipment is properly maintained. Ensure full compliance with food safety, HACCP, allergen management, labelling, FIFO, and company procedures. Maintain exceptional standards of cleanliness, organisation, and workplace safety throughout the bakery. Support seasonal product development, contribute creative ideas, and stay current with industry trends and new baking techniques.
