We are seeking an experienced and innovative Head Chef to lead our culinary team and elevate our seafood offerings. The Role

As our Head Chef, you will be responsible for overseeing all kitchen operations, from menu development and ingredient sourcing to team leadership and financial management. You will play a crucial role in maintaining our reputation for exceptional food and service, contributing directly to our restaurant's success.

Key Responsibilities

  • Culinary Excellence & Menu Innovation: Lead the development and execution of our menu, introducing exciting new dishes and specials, with a focus on fresh seafood. Ensure consistent food quality, presentation, and taste across all preparations.
  • Kitchen Operations & Efficiency: Manage daily kitchen activities, including food preparation, cooking, and service flow. Oversee inventory, ordering, and supplier relationships to maintain optimal stock levels and minimise waste.
  • Team Leadership & Development: Recruit, train, mentor, and motivate a high-performing culinary team. Foster a positive, productive, and collaborative kitchen environment. Manage staff scheduling and performance reviews.
  • Food Safety & Compliance: Implement and enforce strict adherence to all food safety, hygiene, HACCP, and health & safety regulations. Maintain accurate records and ensure the kitchen is inspection-ready at all times.
  • Financial Management: Monitor and control food costs, labour costs, and kitchen budgets to achieve profitability targets. Identify and implement strategies for continuous improvement in kitchen efficiency and cost-effectiveness.

What We're Looking For

  • Proven experience as a Head Chef or highly experienced Sous Chef in a busy restaurant, preferably with expertise in seafood cuisine.
  • Exceptional culinary skills, creativity, and a passion for high-quality ingredients and innovative dishes.
  • Strong leadership, team management, and communication skills.
  • In-depth knowledge of food safety, hygiene regulations, and HACCP principles.
  • Demonstrated ability to manage food costs, inventory, and kitchen budgets effectively.
  • Ability to perform calmly and efficiently under pressure in a fast-paced environment.
  • A commitment to delivering an outstanding guest dining experience.
