Purpose of Position: Assist the sous-chef in preparing and presenting daily menus, particularly high-quality specials, soups, stews, and chilies. The role is based in the Grotto employee dining room. Produce flavorful dishes while meeting production standards and time constraints. Cook dishes according to recipes and collaborate with the sous-chef and executive chef to develop new food selections. Maintain clean service lines, change pans as needed, and ensure dishes are well-stocked and appropriately garnished. Store and rotate food to preserve freshness and minimize waste. Complete daily inventories. Assist servers during busy periods. Perform other duties as assigned.

Qualifications:

  • Previous kitchen experience required.
  • Must be able to stand for long periods and lift up to 50 lbs.

Employment Dates: Summer 2026 (June 20 – September 20, 2026).

Pay Rate: $22.50 per hour.

Purpose of Position: Prepare all food served in accordance with departmental guidelines, directing pastry kitchen operations and leading the pastry team. Supervise bakery operations and production flow for consistent quality and presentation. Oversee use of standard recipes for all bakery and pastry items. Develop dessert menus with the executive chef for restaurants, lodges, and special events. Create weekly employee schedules based on business needs and budget. Assist in recruiting new employees and conduct evaluations. Control food cost and waste through efficient production and rotation. Manage any station during any meal period, aligning workforce and service flow. Assist the chef with monthly inventories, pricing, cost controls, and issuing food for production. Ensure financial targets are met and accounting SOPs followed consistently. Communicate effectively with staff, management, and guests; respond quickly to requests to ensure satisfaction. Recommend maintenance, repair, and upkeep of kitchen equipment and areas. Handle kitchen organization, labeling, dating, rotation, cleaning, food preparation, and hot line work. Support ice cream and bulk shoulder season production for seasonal business levels. Perform other duties as assigned.

Qualifications:

  • Minimum 4 years of pastry kitchen experience in a comparable operation.
  • High school diploma or equivalent.
  • Broad range of pastry production experience and strong kitchen organization, productivity, and versatility.
  • Experience supervising employees.
  • Able to stand for long periods; able to lift 50+ lbs regularly.
  • Flexible to work various hours, holidays, and weekends.
  • Manager ServSafe or similar certification (expected by the Health Department).

Pay Rate: DOE.

Purpose of Position: Assist in presenting, displaying, and producing baked goods and pastries with emphasis on quality, appearance, and service. Prepare baked goods following prep lists and designated recipes and procedures. Display baked goods creatively and keep displays well-stocked, clean, and organized. Offer courteous assistance to guests, both on the phone and in person. Maintain a clean, safe, and sanitary work environment. Perform other duties as assigned.

Qualifications:

  • Minimum 3 months of baking experience or culinary school.
  • Able to work a variety of shifts, including early morning and evening across all four lodges.
  • Provide work shoes, French knife, and other required tools.
  • Able to stand for long periods and lift full sheet pans.

Pay Range: $20.00 – $22.50 per hour DOE.

Purpose of Position: Assist the sous-chef and Cook III with preparation and presentation of daily menus, restocking, and serving selections at peak-hour stations. Cook dishes per recipes and develop new food selections with sous-chef and executive chef. Maintain clean service lines and change pans as needed; keep dishes well-stocked and garnished. Ensure sufficient mise-en-place for daily requirements. Store and rotate food to maintain freshness and reduce waste. Complete daily inventories. Assist servers during busy periods. Perform other duties as assigned.

Qualifications:

  • Previous cooking experience required.
  • Ability to stand for long periods and lift 25–50 lbs.

Employment Dates: Summer 2026 (June – September).

Pay Rate: $22.50 per hour.
