The Role

As Restaurant Manager, you will be the driving force behind Dulse & Brose’s day-to-day success. You’ll lead from the floor, set service standards, and create a culture where guests feel genuinely looked after and the team feels proud of what they deliver. Working closely with the Head Chef and Food & Beverage leadership, you’ll balance exceptional guest experience with strong commercial performance.

Key responsibilities include:

  • Leading daily restaurant operations with a guest-first mindset
  • Recruiting, training, and developing a confident and motivated front-of-house team
  • Setting and maintaining high service standards across every service
  • Collaborating on menus, specials, and GP margins with the kitchen team
  • Managing rotas, labour, costs, and KPIs to meet financial targets
  • Handling guest feedback with professionalism, warmth, and solutions-focused leadership
  • Ensuring full compliance with health & safety and licensing standards
