We are looking for a confident, hands‑on Restaurant Manager to lead Chargrill at Marmalade Hotel on the Isle of Skye. This is an exciting opportunity for an experienced food & beverage leader who thrives in a fast‑paced, quality‑driven environment and enjoys building strong teams, driving standards and delivering standout guest experiences.

You will oversee the day‑to‑day operation of the restaurant alongside Marmalade’s integrated Wine & Bottle Bar, leading from the floor, developing your team and helping drive the commercial success of one of Skye’s busiest and most exciting dining venues.

About Marmalade & Chargrill

Located in the heart of Portree, Marmalade Hotel combines contemporary Scottish design with relaxed hospitality and a strong food and beverage offering. Chargrill is a modern restaurant focused on quality Scottish produce, premium steaks, fresh seafood and confident, approachable service in a stylish and energetic setting. Alongside the restaurant, Marmalade’s Wine & Bottle Bar offers curated wines, premium spirits and a relaxed social atmosphere, making wine knowledge and beverage confidence an important part of this role.

What You’ll Be Doing

  • Leading daily restaurant operations and service delivery
  • Creating a visible, confident presence on the floor during service
  • Coaching, developing and motivating the front of house team
  • Managing rotas, labour costs and staffing efficiencies
  • Supporting wine service and food pairing recommendations
  • Maintaining high standards across presentation, cleanliness and ambience
  • Managing reservations, service flow and guest recovery
  • Driving revenue opportunities, upselling and product knowledge
  • Monitoring stock control, wastage and cost of sales
  • Working closely with the Head Chef and wider hotel leadership team
  • Ensuring compliance with food safety, allergens, licensing law and health & safety standards

What We’re Looking For

  • Previous experience managing a busy restaurant or premium hospitality venue
  • Passionate about food, wine and modern Scottish hospitality
  • Lead from the front and enjoy developing teams
  • Commercially aware and operationally organised
  • Thrive in fast‑paced service environments
  • Strong guest engagement and complaint‑handling skills
  • Confident managing labour, stock and service standards
  • Good understanding of wine service and pairing principles
  • Bring energy, professionalism and personality to service

Experience with systems such as ResDiary, Lightspeed EPOS, RotaCloud or TrustYou would be beneficial, although training can be provided.
