An excellent opportunity for a Sommelier to join the team at HIDE. Hide’s wine program is led by Head Sommelier Julien Sarrasin and Director of Food & Beverage Matthew Mawtus. Boasting the largest wine list in Europe, with access to some of the finest and rarest wines available, we offer circa 100 wines by the glass across all styles, as well as four different tasting flights to accompany the pairing menu.
We have a company ethos that puts learning & development at its core. We offer training support for wine qualifications to enable our Sommeliers to improve their knowledge and skills, alongside dedicated training from the Head Sommelier. The Management group ensure our Sommeliers and the wider restaurant team are invited to meet producers, attend tastings and have all the opportunities to develop and thrive within their Sommelier career.
Working alongside Hedonism Wines, The UK's best buyers have sourced around 6,500 wines and 3,000 spirits, taking the crème de la crème from each region of the world whilst carefully checking the provenance of every bottle.
From classics including the Macallan 1946 Select Reserve, Highland Park 50YO, Ararat Noyan Tapan 70YO and a magnum of Domaine de la Romanée Conti Romanée Conti 1966 to a vast collection of the outrageous and quirky Sine Qua Non, a complete vertical of Masseto, Torbreck The Laird 2006 in a spectacular 27-litre bottle & a whole host of old and rare liqueurs, gins and vodkas.
With an option to purchase wine direct from Hedonism wines whilst sat dining at HIDE we give our guests more options that they could imagine!

Responsibilities
- Have strong wine knowledge & confidence including wine regions, producers and vintage variations as well as associated stylistic differences.
- Have an open and approachable manner and thrive on interacting with people;
- Have a good level of English, additional languages are an advantage, particularly Russian/Mandarin/Cantonese;
- Ensure that all wine is served in the correct glassware & in proper condition;
- Build a rapport with regular guests;
- Look after the wine cellar & deliveries;
- Maintain the standards set for service by Senior Management.
