For the opening of The West Dill Mayfair Hotel London, Colbert Collection, we are seeking a
Head Chef who leads with creativity, culinary skill and commercial insight, and who is inspired by the opportunity to shape a distinctive culinary identity in an intimate luxury environment.
- Key Duties & Responsibilities
- Define and lead the hotel's culinary direction and food concept, aligned with the overall strategy and positioning of the Colbert Collection
- Plan and manage food revenue, cost control and profitability, including menu pricing, waste reduction and efficient kitchen operations
- Develop, refine and execute seasonal and market driven menus, reflecting local trends, guest expectations and cultural sensitivities
- Take full ownership of food quality, consistency and presentation, ensuring the highest luxury standards at all times
- Lead and coordinate all kitchen operations, providing hands on leadership, training and development for the culinary team
- Ensure full compliance with food hygiene, health and safety regulations, maintaining exemplary standards throughout all kitchen areas
- Collaborate closely with hotel management, suppliers and engineering on kitchen investments, equipment and ongoing improvement

- Proven experience as a Head Chef or Senior Sous Chef within the luxury hospitality segment, ideally in a refined hotel or high end dining environment
- Strong culinary identity with a passion for quality, creativity and modern luxury cuisine
- Demonstrated ability to manage food cost, budgeting and supplier relationships effectively
- Natural leader with experience in building, motivating and developing professional kitchen teams
- Hands on mindset with the ability to remain present in daily operations while leading by example
