The Role
We are looking for a passionate, hands-on Head Chef to lead the kitchen operation of a busy, high-volume branded restaurant in the heart of Edinburgh city centre.

This is a fast-paced role for an experienced chef who thrives in a high-energy environment, takes pride in consistently delivering excellent food, and enjoys developing and leading a small, close-knit kitchen team.

As Head Chef, you will take ownership of the day-to-day kitchen operation, ensuring outstanding food quality, exceptional standards of hygiene and safety, efficient service, and strong commercial performance.

Key Responsibilities
Lead, motivate and develop a small kitchen team, creating a positive and high-performing working environment.

Take full responsibility for the day-to-day running of the kitchen.

Deliver consistently high food quality, presentation and portion control in line with brand standards.

Manage high-volume service effectively while maintaining speed, quality and consistency.

Ensure all food preparation and service is organised, efficient and well planned.

Manage stock levels, ordering, deliveries, storage and stock rotation.

Control food costs, wastage and portion sizes to achieve agreed GP targets.

Maintain excellent food hygiene, health & safety and cleanliness standards.

Complete and maintain all required kitchen checks, records and compliance documentation.

Recruit, train, coach and develop kitchen team members.

Manage rotas and labour effectively, ensuring the kitchen is appropriately staffed for trading levels.

Work closely with the General Manager and wider management team to maximise restaurant performance.

Support menu launches, promotions and brand initiatives.

Lead by example, remaining hands-on during busy services and ensuring the team consistently delivers against expectations.

Continually look for ways to improve kitchen standards, efficiency and profitability.

About You
You will be an experienced Head Chef, Sous Chef or Kitchen Manager with a strong background in branded, high-volume or city-centre restaurants.

You will be:
A confident and inspirational kitchen leader.

Comfortable managing a small team in a fast-paced environment.

Highly organised, commercially aware and able to manage costs.

Passionate about food quality and consistency.

Calm and decisive under pressure.

Hands-on and willing to lead from the front.

Experienced in managing food safety, H&S and kitchen compliance.
