What you’ll be doing
In this pivotal role, you’ll combine culinary vision with operational discipline to ensure the restaurant consistently delivers on its goals. You will:
- Lead and inspire the kitchen brigade, motivating them to deliver outstanding food and exceptional service at every service
- Oversee the daily kitchen operation, ensuring all dishes consistently meet restaurant and brand standards
- Collaborate with GRRG on seasonal, creative dishes that delight our guests
- Develop and nurture your team through structured training, appraisals and mentoring, creating a culture of growth and excellence
- Manage food stock ordering and controls within budget, ensuring efficient cost management
- Work closely with the management team to meet sales, labour and food cost targets
- Ensure full compliance with health, safety and food hygiene legislation, creating a safe and efficient kitchen environment
- Take ownership of staff onboarding, training and retention, ensuring every team member feels part of something extraordinary
- Collaborate with front‑of‑house colleagues to ensure a seamless guest journey and an exceptional dining experience

- Excellent organisational skills, with the ability to plan for future needs while managing day‑to‑day operations

- Strong communication skills with the ability to liaise effectively with GRRG team, Hotel & Restaurant Management and the wider HK Restaurant team
