Heckfield Place is a beautifully restored hotel on a 400-acre farm in the county of Hampshire, just outside of London.

The kitchen sources some of its produce from our biodynamic market garden on site, and chefs take regular tours of the farm to draw inspiration from what they see growing.

The kitchen is currently looking for a

Senior Chef De Partie - Pastry to join our dynamic pastry kitchen.

Most of our desserts are created to showcase the fruits, flowers, and fragrant leaves from the farm, and our paired back approach to afternoon tea allows us to serve simple cakes, which are made fresh daily.

We make all our own naturally leavened sourdough bread, as well as a small selection of handmade pastries for breakfast.

To lead, manage and oversee the pastry section, ensure exceptional standards in preparation, presentation and consistency.

This role requires strong leadership, organization, and a passion for developing junior team members while maintaining the highest culinary standards.

We are looking for a chef that is willing to learn and has an enthusiastic approach to a unique style of cooking.

Position responsibilities include but aren't limited to

  • Lead and manage the pastry section to ensure efficient daily operations.
  • To supervise, guide and oversee all pre-service pastry prep relating to the pastry department, making sure the other chefs are working efficiently and effectively.
  • Ensure smooth and consistent service delivery during all service periods
  • To ensure the quality and completeness of all supplier’s deliveries.
  • To write complete and fair staff prep-lists, per shift and ensure these are seen through.
  • To complete fridge lists and help the senior chefs with ordering as necessary.
  • Ensuring all food is correctly labelled, wrapped and stored in the correct fridges/freezers.
  • Train, mentor, and inspire junior pastry team members.
  • The ability to adapt to a changing menu and be open to feedback.
  • Have an open schedule that allows you to work evenings and weekends.
