We are currently recruiting an exceptional Junior Sous Chef to join our Heathrow kitchen team. Working in a fast-paced, high-volume operation, you will play a key role in supporting the delivery of high-quality food while upholding the exceptional standards synonymous with Fortnum & Mason. This is an exciting opportunity for a passionate and ambitious chef looking to develop their leadership skills within a premium hospitality environment.
Working closely with the Senior Sous Chef and Head Chef, you will help drive kitchen performance, support the development of junior team members, and ensure an outstanding dining experience for our guests.
Key Responsibilities
- Support the Senior Sous Chef and Head Chef in delivering food to the highest standards.
- Assist in the day-to-day running of your section within a busy kitchen operation.
- Coach and develop Chef de Parties and Commis Chefs, leading by example.
- Monitor food quality, consistency, and presentation to ensure Fortnum & Mason standards are maintained.
- Complete section checks, audits, and temperature records accurately and on time.
- Assist with stock control, stocktakes, and inventory management.
- Identify operational challenges and communicate them proactively to senior chefs.
- Work collaboratively with front-of-house teams to ensure seamless service delivery.
- Communicate menu changes, allergen information, and operational updates effectively.
- Demonstrate excellent planning, organisation, and time management skills.
- Ensure compliance with company policies, food safety procedures, and health & safety standards.
- Help minimise wastage while maintaining product availability and quality.
You are a passionate and motivated chef who thrives in a fast-paced hospitality environment and takes pride in delivering exceptional food quality. You enjoy supporting and developing others while maintaining the highest standards of food safety, presentation, and operational excellence.
You'll bring:
- Previous experience as a Junior Sous Chef or experienced Chef de Partie within a quality restaurant, hotel, airport, or high-volume hospitality environment.
- A passion for food and delivering exceptional quality.
- Strong leadership potential with the ability to support and develop junior team members.
- Excellent communication and organisational skills.
- A proactive and positive approach to problem-solving.
- Strong knowledge of food safety, HACCP, and kitchen compliance standards.

Please Note: Appointment is subject to satisfactory references and completion of a 5-year employment and education history check. Due to the security requirements of working at Heathrow Airport, successful candidates will be required to complete additional airport security screening and vetting checks. Candidates must be eligible to work in the UK and able to obtain and maintain the required airport security pass.
