Since 2006, Hawksmoor has been the UK’s home of ethically sourced, grass-fed beef, cooked over charcoal and paired with award-winning wines and cocktails. We’re proud to be a certified B Corp, one of the most sustainable restaurant groups in the country, and to have raised over £1 million for Action Against Hunger — all while being recognised as one of the Best Companies to work for, year after year.
We’re now looking for a Wine Manager to be the on-site expert for all things wine in one of our award-winning restaurants. This is a senior, hands-on role where you’ll lead wine education, curate an exceptional list, and be a visible presence on the floor — ensuring our wine offering is as memorable as our food and hospitality. You’ll work with an extensive and ambitious wine programme, featuring 70+ wines by the glass and over 240 bottles, in a 160-cover restaurant with a team of around 35 people. With access to tastings, trips and the support of our wider wine team across the group, this is a genuinely exciting opportunity for a passionate wine professional.
What You’ll Do
- Lead wine education and training across the restaurant, inspiring both FOH and BOH teams to confidently sell and serve wine.
- Curate, source and develop the wine list, keeping it fresh, exciting and true to Hawksmoor standards.
- Be an active, high-level presence on the floor during service, supporting guests and the team.
- Ensure the wine operation runs smoothly both operationally and financially.
- Manage supplier relationships and represent Hawksmoor within the wine industry.
- Work closely with the wider management team to uphold Hawksmoor’s culture, values and sustainability commitments.
Who You Are
- An experienced Wine Manager, Senior Sommelier or wine-focused hospitality leader.
- Passionate about wine education and developing people.
- Commercially minded, with confidence managing margins and performance.
- Warm, engaging and comfortable hosting guests and tastings.
- Curious, ambitious and excited to keep learning — and to help others do the same.
Our Values
- Welcome Everyone – We create warm, inclusive spaces where people feel genuinely welcome and comfortable being themselves.
- Work Hard and Be Nice to People – We set high standards while treating each other with kindness, fairness and respect.
- Hit Hawksmoor Standards – We care deeply about quality, consistency and doing things properly.
- Keep Evolving – We stay curious, open to feedback and always looking to improve.
Benefits
- Refer a friend bonus from day one.
- Tronc paid for every hour you work, including breaks and holidays.
- Wagestream access to wages you’ve already earned.
- Discounted health and fitness benefits.
- Enhanced maternity and paternity leave.
- Income protection insurance for critical illness and death benefit.
- Free meals when you’re at work.
- 50% off food in our restaurants for you and your loved ones.
- Up to 20 paid hours per year for volunteering.
- Exclusive savings on travel, shopping, restaurants and more.
- 28 days’ holiday (including service charge).
- Restaurant welfare budget for snacks, drinks and support during busy periods.
- Significant investment in training and development, including qualifications across Wine, Food Safety, H&S, HR and a five-stage management development programme in partnership with the Watershed Management School.
- Access to counselling, remote GP and physio services, legal advice and more.
We’re building a team that reflects the richness and diversity of the communities we serve. At Hawksmoor, we welcome everyone and believe in creating a workplace where individuality is celebrated, kindness is key and high standards are met together.
