As one of the area’s finest restaurants, Vespers is located in the luxurious five-star Culloden Estate and Spa. Vespers is the winner of Good Food Ireland’s Food Lover’s Choice Award 2024 and offers a gastronomic journey through Northern Ireland’s finest produce. Under the direction of our culinary team, we source the finest local and seasonal produce to create a contemporary Irish menu with a Vespers twist.
As Assistant Restaurant Manager you will be supported by our Restaurant Manager, Robyn Cole, and will assist in providing leadership and day-to-day supervision of our food and beverage team. Hastings Hotels offers extensive learning and development opportunities to help you develop your skills.

About The Role
To assist with the management of the Restaurant for the greatest enjoyment of the guests and maximum profit contribution to the hotel.
Responsibilities
- Take responsibility for the effective leadership of the restaurant employees in the absence of the Restaurant Manager, to ensure the efficient operation of the Restaurant and the delivery of Hastings product and service standards.
- Promote and contribute to a harmonious working environment where all staff are treated with respect and dignity.
- Ensure quality standards and procedures are fully understood, implemented and regularly reviewed, and that formal and informal feedback is used to ensure continual improvement.
- Ensure company policies relating to cash handling, stock control and stock ordering are implemented and monitored, taking appropriate action to resolve problems.
- Ensure all restaurant employees receive appropriate training, coaching and development to provide effective and efficient service in line with Hastings standards.
- Ensure the team are knowledgeable about the facilities and services within the hotel and are proactive in the sale of these to guests.
- Ensure you and the team assist guests with any reasonable request for hotel services.
- Ensure you and the team respond to complaints and find the appropriate solution.
- Maintain effective communication and relationships with other hotel departments, suppliers and agencies to maintain an effective operation and ensure guest satisfaction.
- Ensure the restaurant area, fixtures and equipment are properly maintained and presented to Hastings standards.
- Ensure the security of restaurant and storage areas is maintained at all times.
- Ensure a safe environment is maintained in compliance with health, safety, fire, hygiene and security legislation and company policies and procedures.
- Seek and continuously develop knowledge relating to the industry sector and competitor activity, to provide input into future plans and activities, and so maintain and enhance market position.
- Assist with the recruitment, selection and utilisation of restaurant employees to achieve the optimum use of employee resource in line with business peaks and troughs.
- Contribute to the development of the restaurant business plan, projects and initiatives to continually develop the business and market position.
- Ensure the hotel\’s compliance with all matters relating to licensing laws, Customs and Excise Regulations and all other relevant legislation.
- Any other duties as required by management.
Qualifications
Required Criteria
- Right to Work in the United Kingdom
- Must have excellent attention to detail
- Good communication and basic numeracy skills
- Ability to work well under pressure and be a team player
- A professional appearance
- Previous supervisory experience in a hospitality setting
Desired Criteria
- Educated to GCSE standard or equivalent with grades A-C in English and Maths
- Previous supervisory or management experience gained in a similar high-quality establishment
- Experience of fine-dining
