Sous Chef – Fermain Valley Hotel

Location: Guernsey, Channel Islands

Salary: £45,000 per annum + service charge + excellent colleague benefits

Job Overview

We are currently seeking an active and enthusiastic Sous Chef at Fermain Valley Hotel, part of Hand Picked Hotels.

Responsibilities

  • Support the delivery of an exceptional culinary experience for guests, ensuring that dishes consistently reflect creativity, quality, and seasonal diversity.
  • Work closely with the Head Chef to oversee food preparation and service, maintain outstanding standards of presentation and flavour, and play a key part in the smooth day‑to‑day running of the kitchen.
  • Support and develop the culinary team through training, guidance, and leading by example during service.
  • Help manage kitchen operations, monitor stock and costs, maintain strong relationships with suppliers, and assist with menu delivery across the hotel, special events and private dining rooms.
  • Ensure every dish enhances the guest experience and upholds the hotel’s reputation for excellence in luxury hospitality.
  • Work full‑time, 5 days out of 7 including weekends on a rota basis, 45 hours per week, which may vary depending on business.

Qualifications

  • Active and enthusiastic with a willing attitude and a welcoming and friendly nature.
  • Strong Sous Chef or Senior Sous Chef experience within a multi‑outlet hotel environment.
  • Exposure to weddings, bespoke events and private dining.
  • Consistent focus on precision, organisation and attention to detail.
  • Passion and ability to go above and beyond, taking pride in delivering consistently high standards and excellent consistency daily.
