Yauatcha London, part of Hakkasan Group, home to the internationally acclaimed Hakkasan and Yauatcha restaurants, is seeking an experienced and passionate Deputy Head Sommelier to join our team, working across both London locations – Soho and City. This is an opportunity to work in a fast-paced, high-quality hospitality environment, delivering exceptional guest experiences while contributing to a dynamic wine programme within a world-class brand.
Key Responsibilities
- Deliver exceptional wine service across Yauatcha Soho and Yauatcha City, maintaining brand standards.
- Support the Head Sommelier in developing and maintaining the wine programme across both locations.
- Design, curate and maintain the wine lists in collaboration with the Beverage Director, supporting purchasing and supplier relationships.
- Manage stock control, cellar organisation and margin performance in line with commercial objectives.
- Collaborate with kitchen and front-of-house teams to enhance guest experience through wine pairings and recommendations.
- Ensure compliance with licensing, health & safety and responsible alcohol service standards.
What We’re Looking For
- Proven experience as a Senior Sommelier or Deputy Head Sommelier in a quality restaurant environment.
- Strong wine knowledge (WSET Level 3 minimum; Level 4 desirable).
- Experience contributing to wine list curation and purchasing.
- Strong organisational skills and commercial awareness.
- Excellent communication and guest engagement skills.
- Passion for wine and delivering exceptional hospitality.
- Flexibility to work across both London locations, including evenings and weekends.
- Proof of eligibility to work in the United Kingdom.
