We are seeking an experienced and skilled Night Shift Butcher to join our meat trading company. The successful candidate will be responsible for professional meat preparation, lamb cutting, carcass breakdown, six primal cuts, deboning, trimming, and preparation of wholesale meat portions while maintaining the highest standards of quality, hygiene, and food safety.

The ideal candidate will have strong commercial butchery experience, with the ability to work efficiently in a wholesale meat production environment and prepare products according to customer specifications and company standards.

Working Hours: 8:00 PM – 6:00 AM (Night Shift)

Salary: £35,000 – £40,000 per annum (depending on experience)

Availability: Immediate joiners preferred

Responsibilities:

  • Perform professional butchery duties including cutting, trimming, portioning, and preparing various meat products.
  • Carry out lamb carcass breakdown and preparation.
  • Be skilled in lamb cutting, including carcass breakdown into six primal cuts, professional deboning, trimming, and preparation of wholesale portions according to customer specifications and production requirements.
  • Prepare wholesale meat cuts accurately to meet customer orders and production targets.
  • Perform deboning and trimming while maintaining maximum yield and product quality.
  • Use professional butchery knives, tools, and equipment safely and efficiently.
  • Inspect meat products for quality, freshness, and presentation standards.
  • Maintain high standards of hygiene, cleanliness, and food safety procedures.
  • Ensure correct storage, labelling, and rotation of meat products.
  • Reduce product waste through effective cutting and handling techniques.
  • Work efficiently during night operations to meet daily production and delivery deadlines.
  • Support stock control, deliveries, and preparation planning.

Experience & Skills:

  • Proven experience as a butcher within a wholesale meat company, butcher shop, abattoir, or meat processing environment.
  • Strong experience in lamb cutting, six primal cuts, carcass breakdown, deboning, and trimming.
  • Skilled in preparing wholesale portions according to customer requirements and production specifications.
  • Good knowledge of meat quality, yield management, and portion control.
  • Ability to work independently during night shifts and as part of a production team.
  • Knowledge of food hygiene, HACCP, and health & safety standards.
  • Strong attention to detail and commitment to maintaining high-quality standards.
