Overview

We are recruiting for a motivated, enthusiastic individual seeking a career pathway within our Estates and Facilities team Catering Department. Location: Lynfield Mount Hospital, Heights Lane, Bradford, BD9 6DP.

Main duties of the job

  • Ensure the efficient use of resources in the production of hygienic, safe, high-quality meals produced in a safe and hygienic manner for patients and staff, while providing technical leadership to the kitchen brigade.
  • Supervise and direct the work of the kitchen brigade to ensure meals are produced safely and on time to required standards, meeting all Food Hygiene regulations.
  • Prepare and monitor daily production planning schedules and team briefs to meet all requirements and maximise efficient use of resources.
  • Plan and prepare daily restaurant menus reflecting the brigade’s skills while meeting customer choice requirements.
  • Plan and develop service user menus (including themed days, special diets and special requests).
  • Monitor service of meals in the restaurant for quality, presentation, temperature and customer satisfaction.
  • Maintain storage facilities, stock and waste levels; ensure temperature controls and rotation to meet Food Hygiene requirements.
  • Establish and monitor systems for receipt of goods to ensure quality, quantity and temperature.
  • Inspect and monitor the food service environment and equipment for defects and cleanliness; remedy as required to meet Health and Safety and Food Hygiene regulations.
  • Provide technical leadership and training to create a professional environment and well-motivated team.
  • Ensure the team follows recipes and methods; contribute to the continued development of Food Services.

Person Specification

Essential

  • Qualifications: C & G 706/1, 706/2 & 706/3/NVQ level 3 in Food Preparation and Cookery or NVQ level 3 in Food Preparation and Cookery or equivalent; Level 3 Certificate in Food Safety.
  • Experience: Prior supervisory experience.

Desirable

  • ILM 1st line management or other supervisory qualification; NVQ level 4 in Food Preparation and Cookery or equivalent; Level 4 Certificate in Food Safety.
  • Knowledge: Preparation of high-quality functions; Cook/chill production; COSHH and safe working practices; Health and Safety at Work Act; knowledge of special dietary requirements.
