As our Lead Pastry Chef, you will oversee the daily production of all bakery and pastry items in a dedicated production kitchen with no service, allowing you to focus on crafting outstanding products in a well-organised and professional environment. This is an exciting opportunity to play a key role in shaping the pastry and bakery offering of our newest location while mentoring and developing a small production team.
Your Responsibilities Will Include:
- Leading the daily production of artisan breads, pastries, cakes, desserts, and other bakery products.
- Planning production schedules to ensure products are prepared efficiently and meet daily business demand.
- Maintaining excellent mise en place and ensuring consistency across every batch produced.
- Preparing products to the highest quality standards by following recipes accurately and supporting standardised
- production processes.
- Checking all products before dispatch to ensure quality, presentation, and consistency.
- Monitoring food costs, stock rotation (FIFO), yields, and minimizing waste.
- Assisting with stock ordering, inventory management, and maintaining accurate recipe documentation.
- Supervising, training, and mentoring junior members of the pastry team.
- Maintaining a clean, organised, and efficient production kitchen.
- Ensuring full compliance with food safety, HACCP, and health & safety regulations.
- Liaise with other departments and sites, escalating any issues to senior management when required.
Qualifications:
- Previous experience as a Lead Pastry Chef, Senior Pastry Chef, or similar supervisory role.
- Strong knowledge of artisan bread, pastry, cake, and dessert production.
- Experience leading, training, and developing junior team members.
- Excellent organisational and time management skills.
- Strong attention to detail with a passion for quality and consistency.
- Good understanding of food safety, HACCP, stock control, and cost management.
- The ability to work efficiently in a fast-paced production environment.
- A positive attitude and the ability to thrive in a fast-paced production environment.
What We Offer:
- Full-time position: Up to 48 hours per week.
- Salary: £30,000 – £34,000 per annum, plus service charge (Tronc), depending on experience.
- No service – dedicated production role.
