Dans le cadre de l'ouverture du restaurant Soleya, nous recherchons un Chef de cuisine (h/f) au sein de l'hôtel One&Only The Palm.

Missions Principales :

  • Concevoir avec créativité les menus du Restaurant en respectant les critères de qualités rendus à la clientèle ; un travail en étroite collaboration avec les équipes du Chef Yannick Alléno.
  • Assurer et contrôler la bonne gestion du cycle d’exploitation de Restaurant.
  • Contrôler la production en cuisine, ainsi que le respect des normes en vigueur.
  • Former, informer, piloter et développer son équipe.
  • Contrôler les livraisons de marchandises en termes de qualité et quantité ainsi que l'uniformité des aliments.

Missions :

  • Véhiculer l’esprit du Groupe Yannick Alléno au sein de la brigade.
  • Appliquer les standards et veiller à la bonne application des normes HACCP.
  • Contrôler les coûts de marchandises, minimiser les pertes, maintenir des stocks minimum.
  • Être garant(e) du comportement et de l’hygiène de son équipe.

Profil :

  • Issu(e) d'une formation CAP/BEP cuisine ou BAC Pro cuisine au minimum.
  • Une expérience professionnelle significative de 9 ans dont minimum 3 ans sur un poste similaire est souhaitée.
  • Un excellent leadership et très bonnes capacités d’adaptation.
  • Des expériences dans des restaurants étoilés au guide MICHELIN (chef ou sous-chef).
  • Une grande capacité et volonté en termes de Créativité.
  • Excellente présentation.
  • Pratique des langues étrangères : français et anglais impératif.
  • Expériences réalisées dans le cadre d’une ouverture serait un plus.
