Overview Sous Chef Wanted for Green & Fortune's Rotunda Restaurant, featuring on-site butchery and bakery, and a live fire kitchen. Green and Fortune is an independent, owner-led business focused on seasonal, farm-to-fork hospitality. Rotunda is part of Kings Place. The successful candidate will be excited to offer guidance and support to the events kitchen as needed.
What you'll do:
- Train and develop a team of chefs on quality produce and real cooking, upholding standards of freshness, seasonality and sustainability.
- Develop and maintain new menus focusing on provenance and integrity.
- Ensure the smooth running of the main restaurant kitchen, coordinating with the wider daily catering plan in the building.
- Deputize for the Head Chef, ensuring health & safety and food safety compliance.
- Manage stock taking and ordering through a strong relationship with our farm and producers.
Requirements:
- Ideal is 2+ years of experience in a similar role in a kitchen that uses the freshest locally sourced products.
