We are looking for an experienced Assistant General Manager (Maternity Cover) to support the General Manager in overseeing the day‑to‑day operation across the Restaurant, Private Dining Rooms, Concert Bar and Café, ensuring exceptional guest experience, strong commercial performance and operational excellence.

Operations

  • Support the day‑to‑day running of all restaurant outlets, ensuring service standards, guest satisfaction and operational readiness are consistently achieved.
  • Lead from the floor during busy services, VIP visits and operational challenges, supporting teams to deliver exceptional experiences.
  • Oversee bookings, guest notes, reservations and operational systems to ensure smooth service flow and team preparedness.
  • Work closely with kitchen, bar, café and events teams to ensure seamless coordination across all services.

People

  • Support recruitment, onboarding and development to maintain strong team performance and service standards.
  • Deliver on‑the‑floor coaching, team briefings and ongoing training focused on service, product knowledge and guest care.
  • Assist with rota planning, labour allocation, absence management and performance reviews.
  • Lead by example, promoting company values, professionalism and teamwork.
  • Support labour forecasting and rota management to achieve budget targets and operational efficiency.
  • Respond to sales fluctuations, balancing labour costs while protecting guest experience.
  • Support stock management and stock takes to improve control and minimise variances.
  • Drive spend‑per‑head, covers and service efficiency in collaboration with operational and sales teams.
  • Promote strong communication and teamwork across all departments and shifts.
  • Lead and participate in service briefings to ensure teams are aligned on bookings, events and guest expectations.
  • Work closely with senior operational teams to coordinate covers, timings and service delivery.
  • Review service performance and support continuous improvement through feedback and post‑service reviews.
