Lucky Cat - Manchester is an Asian Eating House and late night lounge inspired by Tokyo's 1930s Kissas and Shanghai's drinking dens. Asian inspired small plates, Robata grills, sushi and sashimi are exquisitely crafted in the open kitchen and raw bar. Each dish is designed to be shared socially at the centre of the table.
Set in the heart of the historic King Street, Manchester within the walls of the old bank, Lucky Cat Manchester boasts three stunning private dining rooms, including the Vault and a mezzanine semi-private space overlooking the restaurant.
The Head Chef must have:
- The motivation and leadership skill to represent the Gordon Ramsay Brand and its world class hospitality standards
- Previous experience as a Head Chef within a premium high-volume quality restaurant
- A solid understanding of classic cooking methods and seasonality, as well as an ability to innovate and create
- A genuine passion and extensive experience across Japanese and Asian cuisine, with a deep understanding of techniques, ingredients, culinary trends and cooking methods
- A keen eye for detail to ensure delivery of the standards and the highest levels of food quality at all times
- A proven track record of recruiting, developing, motivating and retaining a high performing kitchen team
- A strong personality, with confidence and enthusiasm to lead the team in the day to day running of the kitchen
- Exceptional communication skills – verbal and written – to ensure clear communication with all stakeholders
- Ability to multi-task and effectively manage relationships at all levels
Key Accountabilities:
- Being the key leader of the kitchen, effectively managing the team and driving food quality and standards
- Responsibility for leading, inspiring and motivating the team to achieve loyalty and retention
- Responsible for the overall compliance of Health & Safety, and Food Safety to both statutory, and Gordon Ramsay Restaurants standards
- Ensuring the supply chain is effectively implemented and controlled in keeping with the concept and in line with Gordon Ramsay Restaurant standards
- Effective management of the food margin within the targets set
- Effectively coordinate, control and manage all resources and commercials to deliver all targets of the P&L
