About the Role
Nettle is a recently opened rooftop restaurant guided by the British landscape and the seasons, with a dining room, balcony and garden looking out across the city. The Floor Manager leads each service from the floor, setting the pace, directing the team and keeping communication clear between the restaurant, kitchen, bar and the Guest Relations Manager. The role reports to the Nettle General Manager and works closely with the Nettle Assistant General Manager, the Guest Relations Manager and the wider ACRE Hospitality teams. Nettle is the primary home within the wider ACRE team, and the postholder remains visible and hands-on throughout each shift, anticipating pressure points and making confident decisions so the guest experience feels warm, personal and well organised.
Key Responsibilities
- Lead the floor throughout service, deploy the team against reservations and trading demand, set clear priorities and adjust the plan as conditions change while remaining visible to guests and colleagues.
- Lead concise pre-service briefings that confirm reservations, member and guest preferences, dietary and allergen requirements, menu changes, sales priorities, team deployment and the plan for the shift.
- Work closely with the Guest Relations Manager to coordinate arrivals, reservations and table turns, balancing timed dining with a relaxed guest experience.
- Build relationships with members and guests, recognise preferences and respond thoughtfully to feedback, resolving concerns promptly within own authority, recording relevant details and escalating serious or recurring issues to senior management.
- Keep communication flowing between the floor, kitchen and bar, anticipating delays and adjusting service before they affect the guest experience.
- Coach colleagues in the moment, give specific and constructive feedback, recognise strong performance and support Supervisors and junior team members to develop their confidence, knowledge and skills.
- Ensure every service area is prepared, stocked and well maintained, overseeing opening and closing procedures, checklists and consistent use of operating standards.
- Build the team's knowledge of ingredients, provenance, food and drink so they can make confident, relevant recommendations that improve the guest experience and grow sales responsibly.
- Support labour deployment in line with the trading plan, monitor the availability and use of linen, glassware and crockery, and use POS, reservation and scheduling systems accurately so that bills, cash handling and end-of-day procedures are accurate
- Shift handovers are clear and guest feedback and operating issues become practical follow-up actions.
- Lead consistent compliance with food hygiene, allergen, health and safety and licensing procedures, completing required checks, maintaining clean and safe service areas and escalating maintenance, safety or operational risks promptly.
- Build a positive, inclusive team culture and work collaboratively across ACRE's restaurants, bars, events and member spaces when appropriate and agreed.
