This is a dual reporting role, reporting directly to both the Finance Manager and the Restaurant and Bar Manager. It is a full-time, on-site position working 40 hours per week; some flexibility may be required during weekends or at month-end.

This is a physically active role that involves handling and moving F&B stock, including receiving deliveries, managing the cellar, and distributing cases of wine, beer, and other supplies — including kegs — across various outlets within the hotel. The successful candidate should be comfortable with manual handling and working in a fast-paced, operational environment.

Responsibilities

  • Finance Support & Revenue Controls: Prepare and distribute daily revenue control reports (E-Pack); post daily revenues and track guest covers; assist with accounts payable (processing food and supplier invoices); support accounts receivable (raise event invoices and manage payments); respond professionally to guest billing queries; help reconcile balance sheet items and support the month-end process.
  • Stock & Cellar Management: Manage beverage and F&B stock records via Procure Wizard; process beverage orders and deliveries using Birchstreet; maintain accurate cellar records and manage stock requisitions to outlets; conduct regular cellar balance checks and spot stock counts; organise beer line cleaning and monthly beverage audits; monitor par stock levels and reduce wastage.
  • General Duties: Perform regular compliance and cashiering checks (e.g. outlet floats, petty cash); liaise with the Groups & Events team to manage billing and deposits; ensure all financial control procedures and audit standards are followed; support other Finance tasks as needed, especially during month-end or audits.
