We are looking for an experienced and inspiring General Manager to lead the reopening of George & Dragon Clerkenwell. As General Manager, you will take full ownership of the venue's operational performance, financial success, team culture and guest experience. You will lead from the floor, drive standards across all departments and ensure the pub operates efficiently while delivering exceptional hospitality. This is a role for a confident hospitality leader with strong premium pub experience who thrives in fast-paced, high-volume environments and understands how to balance people, product, service and commercial performance.

What You'll Be Doing:

  • Leading, motivating and developing front-of-house and management teams to create a positive, high-performing culture
  • Recruiting, onboarding and training team members across the venue
  • Building a strong opening team culture and setting standards from day one
  • Managing rotas and labour budgets using Deputy to ensure efficient staffing levels
  • Conducting regular performance reviews, coaching and development conversations
  • Driving team engagement, accountability and progression across all departments
  • Supporting and mentoring Assistant General Managers, supervisors and department heads in their progression
  • Maintaining a visible and hands-on presence on the floor during service
  • Managing opening and closing procedures and ensuring operational readiness at all times
  • Maintaining exceptional cellar standards and overseeing cask ale quality
  • Ensuring all department responsibilities are completed consistently and to company standards
  • Identifying opportunities to improve systems, efficiency and overall site performance
  • Delivering exceptional customer service standards across all areas of the business
  • Creating a welcoming, energetic and inclusive environment for guests and staff
  • Ensuring the venue consistently delivers memorable hospitality experiences
  • Maintaining strong standards of atmosphere, presentation and service throughout trading hours
  • Taking full ownership of the venue P&L and working to meet and exceed financial targets
  • Managing labour costs, wet and dry GP margins and operational expenditure
  • Driving revenue growth through events, activations and local marketing initiatives
  • Analysing sales performance and implementing strategies to improve profitability
  • Preparing and delivering weekly business reports to senior leadership
  • Maintaining all health & safety, food safety and fire safety procedures across the venue

What We're Looking For:

  • Previous experience as a General Manager within a premium pub or high-volume hospitality environment
  • Strong leadership experience across food-led and wet-led operations
  • Proven ability to manage large teams and develop future leaders
  • Strong commercial awareness with experience managing P&L performance, labour and GP targets
  • Strong understanding of licensing, compliance and health & safety regulations
  • Calm and confident decision-making under pressure
  • Excellent communication and people management skills
