Genuine Dining is looking for an experienced Executive Head Chef to lead the catering operation at the London office of a large law firm. The business is relocating to a brand-new, state-of-the-art building in the City, and this role will play a key part in shaping the food offer from the start. Featuring two coffee bars, juice bar, large retail restaurant space, terraces and fine dining meeting rooms, the ideal candidate will have experience in retail and hospitality and will be a fundamental part of creating menus ready for the opening.
The Role:
- You’ll be responsible for the full kitchen operation, including the main workplace restaurant, hospitality and fine dining, leading a brigade of 10 chefs and serving around 400 covers a day.
- This is a busy, professional environment where consistency, organisation and strong leadership are essential.
- You’ll also work closely with the client and the Genuine Dining team to make sure the offer continues to evolve and reflects what today’s workplace diners want.
- Benchmarking and analysing nearby competitors is essential, as the location is in a busy area with a high concentration of restaurants.
Standards & Food Safety:
- Maintaining high standards of food safety, hygiene and allergen management.
- Ensuring compliance with HACCP, EHO and Genuine Dining procedures.
- Training and supporting the team to maintain strong kitchen standards.
- Making sure quality and consistency are maintained across retail and hospitality.
Food & Menus:
- Planning seasonal menus for the restaurant and hospitality.
- Using ingredients and modern cooking styles.
- Keeping the offer interesting and relevant for a busy office environment.
- Managing food costs, waste and kitchen efficiency.
- Having ESG initiatives at the forefront.
What We’re Looking For:
- Previous Head Chef or Executive Chef experience in a high-volume kitchen. This is a must!
- A strong team leader who can organise, motivate and develop chefs.
- Someone comfortable working with clients in a professional environment.
