What You Will Do:
The Food and Beverage Cellar Controller will oversee the efficient management, inventory control, and distribution of all beverages from the main cellar to various outlets and departments such as Meeting & Events, In‑Room Dining, Orchid, Green, 1215 Bar & Terrace, Il Giardino, and Windsor Brasserie. This role ensures accurate tracking of stock movements, minimises losses, supports par stock levels, and contributes to overall beverage cost control and profitability.
- Conduct daily counts of high‑value items and weekly full stock takes, updating digital inventory systems linked to POS (e.g. Oracle MICROS).
- Authorise and record all beverage requisitions in line with approved par levels.
- Review and approve outlet requisitions to agreed deadlines and prepare stock for scheduled collections.
- Apply FIFO principles and carry out quality checks on receipt and issue of stock.
- Monitor cellar security and report any discrepancies or unauthorised access.
- Produce regular stock and variance reports, flagging low levels to prevent shortages.
- Maintain correct storage conditions, cleanliness and organisation within the cellar.
- Achieve high inventory accuracy, control variances and support GP targets.
- Build strong relationships with outlet managers and attend F&B meetings to drive improvements.
- Ensure full compliance with Health & Safety regulations and continuously seek process enhancements.
