Job Summary
The Kitchen Team Lead is a key supervisory role responsible for the day-to-day excellence of the back-of-house (BOH) operations. This role focuses on leading the kitchen team during shifts to ensure high-quality food production, strict adherence to safety standards, and efficient service. The Kitchen Team Lead works closely with the leadership team to maintain profitability through waste control and staff mentoring.
Key Responsibilities
- Operational Supervision & Team Support
- Lead and mentor the BOH kitchen staff during daily service.
- Assist in training new staff members and ensuring they understand kitchen standard operating procedures (SOPs).
- Coordinate with Front of House (FOH) to ensure smooth communication and exceptional customer service.
- Monitor staff performance during shifts to maintain optimal productivity and service speed.
- Culinary Execution & Quality Control
- Supervise the preparation and presentation of dishes to ensure they meet the FVR standards.
- Assist the leadership team in implementing seasonal menu changes and ensuring all staff are trained on new recipes.
- Maintain strict quality control over all outgoing products to enhance the brand's reputation.
- Kitchen Management & Safety
- Manage daily kitchen costs by minimizing food waste and monitoring portion control to protect Gross Profit (GP) margins.
- Oversee daily stock levels and assist with ordering and inventory management.
- Ensure the kitchen strictly adheres to all health, safety, and food hygiene regulations, including HACCP principles.
- Maintain detailed records regarding food allergens and ensure cross-contamination prevention protocols are followed.
Requirements
- Knowledge:
- Thorough understanding of food preparation techniques and culinary principles.
- In-depth knowledge of food hygiene standards and safety protocols.
- Comprehensive knowledge of HACCP principles and food safety management systems.
- Detailed understanding of food allergens and cross-contamination prevention.
- Knowledge of various cuisines, ingredients, and dietary requirements, with the ability to cater to diverse customer needs.
- Proficiency in using kitchen equipment and utensils.
- Understanding of stock control, food costing, and kitchen management principles.
- Experience:
- Proven experience as a chef or cook in a professional kitchen environment, preferably in a café or restaurant setting.
- Experience in menu planning and development is highly desirable.
- Demonstrated ability to manage kitchen operations and lead a team.
- Experience in implementing and managing food safety systems, including HACCP and allergen control.
