Gaia Restaurant, the renowned Greek‑Mediterranean dining destination in Mayfair, is looking for an experienced and passionate Sommelier to join our team. As Sommelier, you will play a key role in elevating the guest experience, curating memorable wine journeys, and sharing your knowledge and enthusiasm with both guests and colleagues. Working closely with the Head Sommelier, you’ll help ensure the wine programme reflects the elegance and high standards of Gaia.

Responsibilities

  • Deliver exceptional wine service in line with Gaia Restaurant standards.
  • Provide engaging recommendations and pairings for guests.
  • Support and lead staff training to build wine knowledge and confidence.
  • Assist with stock control, cellar organisation, and supplier coordination.
  • Maintain a consistently high level of service and attention to detail.

Requirements

  • Proven experience as a Sommelier or in a wine‑focused role within a high‑end or fine‑dining environment.
  • Strong understanding of global wine regions and pairings.
  • WSET Level 2 or above preferred.
  • Confident communicator with a warm, professional presence.
  • Passion for hospitality and creating memorable guest experiences.
