Shanghai-Me, part of the Fundamental Hospitality Group, is seeking a talented and dedicated Sushi Chef de Partie to join our award-winning culinary team. Located in the heart of Mayfair, Shanghai-Me is renowned for its elegant design, vibrant atmosphere, and refined pan-Asian cuisine. This is an excellent opportunity for a skilled sushi chef to develop their career within one of London’s most prestigious dining destinations.
As Sushi Chef de Partie, you will be responsible for running your section during service, preparing and presenting sushi and sashimi dishes with precision, consistency, and attention to detail. Working closely with the Senior Sushi Chefs, Head Chef, and wider kitchen brigade, you will support the delivery of the highest culinary standards while continuing to refine your technical skills. This role suits a motivated sushi professional with strong fundamentals, a passion for Japanese cuisine, and the ambition to grow in a luxury hospitality environment.
Key Responsibilities- Prepare and execute sushi and sashimi dishes to a high standard.
- Maintain consistency in quality, presentation, and portion control.
- Follow all food safety, hygiene, and HACCP procedures.
- Support Senior Sushi Chefs in daily section operations.
- Assist with prep, stock rotation, and minimising waste.
- Contribute to a smooth and efficient kitchen service.
- Minimum 3 years’ experience working as a sushi chef.
- Previous experience as a Sushi Chef de Partie or strong Sushi Demi Chef de Partie.
- Solid knowledge of fish handling, sushi preparation, and knife skills.
- Passion for Japanese cuisine and attention to detail.
- Reliable, organised, and calm under pressure.
- Ability to work well within a fast-paced, high-end kitchen.
