Due to company growth, our in-house team of specialist craft Butchers would like to welcome another Butcher to join the team based from our Carver and Co Depot part of Sysco GB in Wigan. We offer exclusive cuts of British and Irish beef, all butchered, prepared, aged, stored and packed on site.
As our new Butcher you will work alongside the small team of operatives to support a wide variety of tasks across the production operation. You can expect to be preparing a variety of meat products such as prime steak cuts, chops and roast joints. Duties will include boning, cutting and trimming into portions as per customer requirements. At all times you'll be providing high-quality products as well as maintaining excellent standards of health and safety, food safety and HACCP compliance.
You will also contribute to training of our Butchery Operatives in basic meat trimming and meat preparation skills, keeping focused on quality and ensuring we consistently produce the very best products for our customers. This role includes using machinery to prepare meat to supply customer orders, picking orders, correctly packing and labelling meat products, storing products – both goods in from suppliers and finished goods from production, and cleaning equipment, tools and machinery.
You’ll also be required to complete documentation – recording product temperatures and completing basic HACCP paperwork. The position requires you to keep on your feet for long periods of time in a chilled environment, and there’s also an element of manual handling where you will need to be able to bend and lift to receive supplies, handle the meat products to store finished products.
You’ll ideally be an experienced Butcher able to trim and portion various whole primal joints, with a track record of monitoring and achieving correct portion control for high end cuts such as centre cut fillet steaks. Job training can be offered for individuals who have keen interest in the food industry (i.e. chef) who will relish the opportunity to experience training in basic knife skills and opportunity to specialise in the use of butchery machinery.
