This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 8 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar).
About the Role: As Assistant Head Sommelier, you will support the Head Sommelier in leading the wine programme for our new dining concept. This is a key leadership position within the restaurant team, responsible for delivering exceptional wine service and curating an outstanding guest experience.
What you will do:
- Assist in managing the sommelier team and ensuring smooth daily operations.
- Support the development and maintenance of an innovative wine list that complements the restaurant’s culinary vision.
- Oversee wine cellar management, stock control, and supplier relationships.
- Train and mentor junior sommeliers and service staff.
- Deliver personalised wine recommendations and pairings for guests.
- Uphold Four Seasons standards of excellence in service and hospitality.
What you bring:
- Previous experience as a Senior Sommelier or Assistant Head Sommelier in a Michelin-starred or luxury environment.
- Strong knowledge of global wine regions and trends.
- Excellent leadership and communication skills.
- WSET Level 3 or equivalent qualification preferred.
- Passion for creating memorable guest experiences.
- A proactive, hands‑on approach with excellent communication and team leadership.
- A desire to innovate and elevate the guest experience through wine.

Schedule and hours: This is a full-time position, contracted at 40 hours per week. Wine service is both lunch and dinner, 7 days a week. Candidates must be flexible to work mornings, evenings and weekends.
