This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 8 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar).
Join Our Opening Team – Sommelier, New Signature Restaurant Opening 2026
Are you passionate about exceptional service and memorable dining experiences? Be part of something extraordinary as we open our brand-new signature restaurant at Four Seasons Hotel London at Tower Bridge. The restaurant will be open for breakfast, lunch and dinner, 7 days a week. We are seeking enthusiastic and service-driven Sommeliers to join our opening team and help shape a world-class dining destination in the heart of London. With a focus on quality ingredients, bold flavours, and warm, intuitive service, this is more than just a place to eat, it’s a place to experience.
About the role: As Sommelier, you will be the wine ambassador of our new restaurant, guiding guests through an expertly curated wine list and delivering a memorable, personalised experience. You’ll work closely with the culinary and service teams to ensure perfect pairings and seamless service, while also playing a key role in shaping the restaurant’s wine identity. Please note that this role is expected to commence in early February 2026.
What You’ll Do:
- Help to curate and maintain an exceptional wine list that complements the steakhouse menu
- Provide expert wine recommendations and pairings to enhance the guest experience
- Assist with the wine service of a determined section of the restaurant
- Ensure wine serving equipment is clean and polished
- Stay current with wine trends and knowledge
What you bring:
- Certified Sommelier (WSET Level 3 or equivalent preferred)
- Previous experience in a similar role within a luxury or high-end restaurant
- Deep knowledge of global wine regions, varietals, and food pairings
- Strong communication and guest engagement skills
- A passion for hospitality and a desire to create unforgettable experiences
- The Right to Work in the UK
Schedule and hours: This is a full-time position, contracted at 40 hours per week. This position will cover lunch and dinner service, full flexibility is needed to cover both shifts 7 days per week.
