Are you passionate about exceptional service and memorable dining experiences? Be part of something extraordinary as we open our brand‐new signature restaurant at Four Seasons Hotel London at Tower Bridge. The restaurant will be open for breakfast, lunch and dinner, 7 days a week.

About The Role

We are looking for a knowledgeable and driven Senior Sommelier to take the lead in curating and delivering an exceptional wine experience for our guests. This is a unique opportunity to step into a leadership role, reporting directly to the General Manager, and shape the wine programme with creativity and autonomy. Please note that this role is expected to commence February 2nd, 2026.

What You Will Do

  • Oversee the wine service across all dining outlets, ensuring consistency, excellence, and guest satisfaction.
  • Curate and maintain the wine list, working closely with suppliers and the culinary team.
  • Manage stock levels, cellar organisation, and purchasing in line with budget and quality standards.
  • Train and mentor the front‐of‐house team to elevate wine knowledge and service.
  • Engage with guests to provide thoughtful recommendations and memorable experiences.
  • Lead wine tastings, events, and pairings that reflect the character of our venue.

What You Bring

  • A confident and passionate sommelier with strong wine knowledge and service skills.
  • Previous experience in a sommelier or wine‐focused leadership role in a high‐end restaurant or luxury hospitality.
  • WSET Level 3 or equivalent qualification preferred.
  • A proactive, hands‐on approach with excellent communication and team leadership.
  • A desire to innovate and elevate the guest experience through wine.

Schedule And Hours

This is a full‐time position, contracted at 40 hours per week. Wine service is both lunch and dinner, 7 days a week. Candidates must be flexible to work mornings, evenings and weekends.
